Unsweetened sushi vinegar, also known as Genmai Su or rice vinegar, is a versatile ingredient. It can not only flavour sushi rice, but also make delicious garnishes, add moisture to wok-fried items or mellow the salty taste a little. It goes well with other Japanese condiments such as shoyu, tamari and sesame oil, as well as with sweet ginger syrup.
Sushi vinegar is made according to authentic Japanese methods.
