Clovesare the dried flower buds of a tropical evergreen tree (Syzygium aromaticum) originating from the Moluccas Islands (Indonesia), also known as the Spice Islands. They have been valued for their aroma and healing properties since antiquity, with cloves being used in China, India and the Middle East since before our era. In Europe, they became popular in the Middle Ages as a luxury spice and preservative. Cloves are used in cooking to flavour both sweet and savoury dishes, especially in baked goods, marinades, compotes or hot drinks such as tea. They are also widely used in aromatherapy and folk medicine, where their essential oil has antibacterial and anti-inflammatory properties and is often used to relieve toothaches. They are used to make biscuits, desserts, sweets, ice cream, juices, compotes and cakes. They are added to pickles such as cucumbers, cabbage, carrots and beetroot.
Aromatic, festive-smelling cloves are a good pairing with cinnamon, bay leaves and black peppercorns, turmeric, caraway seeds and coriander.
They are also widely used in aromatherapy and folk medicine, with their essential oil having anti-bacterial, anti-inflammatory properties and are often used for soothing toothache pain.
